Day 9 of Two Week Cooking Challenge

So tonight I made a delicious and probably extremely unhealthy dinner of Sausage Alfredo with veggies and a homemade Alfredo sauce. Pretty simple to make even if it is unhealthy and makes a great comfort food.

Ingredients:
1/2 pkg angel hair pasta or fettuccine noodles (I used dreamfields spaghetti pasta because it is a slightly healthier alternative for noodles)
1 small can of peas and carrots
1/2 pkg of frozen broccoli

1 1/2 cups grated parmesan cheese
1 cup heavy cream or (1/3 cup melted butter 1 cup milk)
1/4 cup shredded mozzarella cheese
1/4 cup butter 
2-3 tbsp minced garlic
dash of dried parsley flakes


In small sauce pan melt 1/4 cup butter. Add cream (or melt 1/3 cup butter and add milk then add 1/4 cup butter). Add minced garlic and stir. Add parmesan cheese to mixture. It will become extremely thick so stir frequently to prevent burning. I like to add a little milk to mine to thin it out some after I add the parmesan. Add parsley and mozzarella. Stir until mozzarella is melted and blended well to mixture. Add milk as desired to thin mixture. Set aside.

While making sauce, begin boiling water. After making sauce, begin chopping sausage into slices. Add sausage to a pan and fry. Drain, return to pan and set aside.

Once water is boiling add noodles and broccoli. Let cook for several minutes. When it is almost done, add peas and carrots. Once noodles are done, drain and add to sausage. Mix well and top with alfredo sauce. Blend thoroughly. Top with tony's , salt and pepper if desired. Enjoy.

Day 8 of Two Week Cooking Challenge

Last night I made a delicious asian stir-fry served over white rice. Another extremely easy meal to toss together, loaded with flavor.

Ingredients:
3 chicken breasts
1 pkg stir-fry veggies (I used a broccoli stir-fry that had mushrooms, bell peppers, onions, corn, and a bit of other things. Found it in the frozen isle at walmart. Your choice of veggies is up to you though.)
3 tbsp olive oil
3 tbsp minced garlic
2 tbsp seasame oil
cayenne pepper
onion powder
garlic powder
salt
pepper
1/8-1/4 cup soy sauce



Cut up your chicken stir-fry style. Add olive oil to large pan and let it heat. Toss in your chicken and minced garlic. Add a dash of salt, pepper, onion powder, garlic powder, and a light dash of cayenne pepper. Cook on med-high heat until chicken is no longer pink on the outside. Toss in pkg of veggies. Pour sesame oil and soy sauce over the top and mix well. Cover and let cook for several minutes or until desired vegetable tenderness. Stir occasionally. Serve over white rice (I use jasmine rice for my asian style meals). Enjoy. :)

Day 7 of Two Week Cooking Challenge

Today I got up super early and decided to make a breakfast dish instead of dinner. However, this dish can serve as, lunch and dinner as well. Bacon Breakfast Tacos! One of my favorite breakfast dishes.

Ingredients:
1 pkg Hash browns with onion and bell pepper in the mix
2 tbsp butter
1/4 cup water
6 eggs
tony's
garlic powder
onion powder
1/2 pkg Turkey Bacon



In a large skillet, melt butter and add hash browns. Cook on med heat for about two mins, stirring constantly. Sprinkle tony's, garlic powder and onion powder over the top and mix well. Add water, stir, and over. Let cook for several minutes.
While cooking chop bacon into desired size and beat eggs together in small bowl.
Add bacon to mixture and recover.
After two mins, stir mixture and add eggs. At this point I usually alternate between stirring constantly for a few minutes and covering for about 30 seconds at a time. You will know when the mixture is done because the hash browns will be soft and all the egg will be cooked.
Serve on warmed tortillas (I like to do mine over an open flame ((gas stove)) for a better flavor) with half a slice of cheese in the middle. You can also add hot sauce or picante to the top for an extra kick.

Day Six of Two Week Cooking Challenge

So I am a little behind in putting these up, but better late than never I guess.
On the sixth day I cooked Sweet Sausage Tortellinis with veggies. This is a SUPER SIMPLE meal.

Ingredients: 
One package of tortellini from the grocery store. Can be frozen or thawed and refrigerated. 
1/2-1 cup frozen spinach
1 small can of peas and carrots
1 can mild rotel
minced garlic
olive oil
oregano
Tony's
garlic powder
onion powder
salt
pepper
grated parmesan cheese



Bring water to a boil. Add tortelloni. Let boil for 2 minutes and add spinach, rotel and peas and carrots. Boil for another 5 mins or so.

While boiling, in a small bowl, combine 6-8 tbsp olive oil, 4 tbsp minced garlic, a dash of oregano, dash of salt and pepper, 2 tbsp parmesan cheese, dash of garlic, dash of onion powder and about  a tbsp Tony's. Mix well.

When tortelloni is done boiling, strain, return to pot and add oil and seasoning mix. Coat well. Serve. Enjoy. :)

Day 5 of Two Week Cooking Challenge

So today, without realizing Chris doesn't have to work tomorrow, I ended up making some crock pot beef tips with carrots served over rice and a side of green beans. Another fairly easy meal to toss together.



 

Ingredients:
1 beef tip roast
1 onion
1 bell peper
4 tbsp minced garlic
Tony's Seasoning
Bag of baby carrots

Slice roast into "tips." I trim most of the fat and whatnot off so the roast is a bit healthier and then add a big chunk of the fat on top of everything while it cooks and remove it after about an hour or so, but this is optional. Slice bell pepper and onion. Toss all ingredients into crock pot. Top with minced garlic and add liberal amounts of Tony's. I also add a little garlic powder and onion to the mixture. Maybe a tsp or so of each. Mix everything together until veggies and roast are well coated. Pour water over mixture until almost completely covered. Cover with lid and simmer on high for 4-6 hours or on low for 6-10 hours. Add carrots about an hour or so before it's done cooking or if you are leaving it for the day, toss them in from the beginning. I also use a rice cooker to make my rice.

Day 4 of Two Week Cooking Challenge

So tonight I made BAKED Fajitas. That's right, baked. Stumbled across this recipe on a friend's Pinterest page and really wanted to try it. Tonight just happened to be the night. :) I served this with salsa and some Mexican Corn. Muy Delicioso!

Ingredients:

1- 1 1/2 lb Chicken Breast
1 Red/yellow Bell Pepper
1 small onion
1 Green Bell Pepper
1 can diced tomatoes with green chiles (like rotel)
2 tsp chili powder
2 tsp ground cumin
1 tsp garlic powder
1/2 tsp salt 
1/2 tsp dried oregano
2 TBSP Vegetable Oil

Preheat Oven to 400*F

Mix all seasonings together and add oil to mixture. Set aside.
Cut chicken into fajita style slices.
Cut bell peppers and onion into slices.
Add chicken and veggies together. Drizzle with seasoning mixture and toss together until well blended. Add tomatoes and chiles and mix together. Bake at 400*F in glass pan for 20 minutes. I used a 9x13 pan. Perfect size for the mixture.
Serve on tortillas and top with salsa and cheese.

Day 3 of Two Week Cooking Challenge

So today I made what I'm going to call Camper's Delight. Super simple to toss together and super delicious! Chris said he could eat this everyday. lol

Ingredients:

1 pkg Eckridge Skinless Sausage
1 Red Bell Pepper
1 Green Bell Pepper
1 or 2 Zucchinis 
8-10  small Yukon Gold Potatoes (I bought a small bag and used about half)
1 Red Onion

Chop all ingredients into slices and toss together. Place in large pieces of foil and seal shut.
Place on top rack of grill and cook on medium to medium-high heat for 30 mins.

Empty into bowl and top with Tony's seasoning. Enjoy. :)

Day 2 of Two Week Food Challenge

So we had tons of pizza rolls left over. I ended up putting them in the fridge and decided we could have both the pizza rolls and some Southwestern Egg Rolls for Lunch and Supper. This recipe is pretty simple, just a little time consuming. I ended up making some homemade guacamole to go with it.

Ingredients:

  • 2 cups frozen corn, thawed
  • 1 can (15 OUNCES) black beans, rinsed and drained
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dried
  • 1 1/2 cup shredded Mexican cheese blend
  • 1 can (4 ounces) chopped green chilies, drained
  • 4 green onions, chopped
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne red pepper
  • 1 package egg roll wrappers
  • **1 egg beaten for sealing egg roll (can substitute water)
Preheat oven to 425*F
Mix all ingredients together except egg and wrappers.
Using a measuring cup, place 1/4 cup mixture in middle of wrapper (place wrapper with corners facing N,S, E, & W). Fix mixture to a line going across wrapper (west to east). Fold east corner of the wrapper in then south corner up. Fold West corner over. Roll entire roll upward towards last corner. Spread egg on last part of corner before completely rolling up so it will stay sealed shut. Place on greased pan edge side down. Once finished, brush tops lightly with olive oil. Bake for 10-15 mins, turning them over halfway through cooking.
Serve with guacamole, salsa or sour cream.

Day One of 2 Week Food Challenge

So on this day I went grocery shopping and braved walmart for about 3 hours... $400 bucks later, I walked out. lol I was super exhausted after getting home and having to clean out the fridge, put the groceries away, take out the trash and do the dishes. So my hubby and I tag teamed on supper. Ended up making pizza rolls. :)

 Ingredients:
4 cans of buttermilk biscuits (10 per can)
block of colby jack cheese
package of sliced pepperoni (about 90)
Marinara, pizza sauce or Ranch (for dipping)
Spray Butter
Italian seasonings

Grated Parmesan Cheese
Glass Pans

Preheat oven to 425*F

Cut block of cheese into 40 pieces. Roll out biscuit. Stack one pepperoni then one piece of cheese and another pepperoni on top of that. Pull edges together to close and place edge side down in a greased glass pan. Repeat until pan is full and all biscuits are used. I ended up using a 9x13 pan and a 10" pie pan. Spray tops of biscuits with spray butter. Sprinkle Parmesan cheese over tops and then sprinkle the Italian seasonings over the tops.
Bake for 18-20 mins.
Remove and serve with your choice of dipping sauce.

Hello All! Welcome to my new food blog! This was started as part of a 2 week cooking challenge. Here you will find photos and recipes that I cook myself as well as cooking tips and fun stories about my cooking experience.
Let me begin by saying that I am by no means, a professional chef. I am a stay at home mom for the most part and to be honest, up until my Junior year in high school, I couldn't cook squat. I'd burn totino's pizzas in the oven... lol Not sure how it happened, but one day I seemed to acquire the skills necessary to make a decent meal. Both sides of my family have produced amazing cooks (although none professional) and thankfully, I believe I was just a late bloomer in the cooking department... As I started cooking more I started getting better and learned my own style. I am all about bold flavors with rice spices. Bland food is just not my thing. So if you are looking for mild and plain foods, you probably wont find much of that here. I am big on cajun food (half my heritage) and the occasional mexican dish (the other half of me).
