Day 5 of Two Week Cooking Challenge

So today, without realizing Chris doesn't have to work tomorrow, I ended up making some crock pot beef tips with carrots served over rice and a side of green beans. Another fairly easy meal to toss together.



 

Ingredients:
1 beef tip roast
1 onion
1 bell peper
4 tbsp minced garlic
Tony's Seasoning
Bag of baby carrots

Slice roast into "tips." I trim most of the fat and whatnot off so the roast is a bit healthier and then add a big chunk of the fat on top of everything while it cooks and remove it after about an hour or so, but this is optional. Slice bell pepper and onion. Toss all ingredients into crock pot. Top with minced garlic and add liberal amounts of Tony's. I also add a little garlic powder and onion to the mixture. Maybe a tsp or so of each. Mix everything together until veggies and roast are well coated. Pour water over mixture until almost completely covered. Cover with lid and simmer on high for 4-6 hours or on low for 6-10 hours. Add carrots about an hour or so before it's done cooking or if you are leaving it for the day, toss them in from the beginning. I also use a rice cooker to make my rice.
