Day 4 of Two Week Cooking Challenge

So tonight I made BAKED Fajitas. That's right, baked. Stumbled across this recipe on a friend's Pinterest page and really wanted to try it. Tonight just happened to be the night. :) I served this with salsa and some Mexican Corn. Muy Delicioso!

Ingredients:

1- 1 1/2 lb Chicken Breast
1 Red/yellow Bell Pepper
1 small onion
1 Green Bell Pepper
1 can diced tomatoes with green chiles (like rotel)
2 tsp chili powder
2 tsp ground cumin
1 tsp garlic powder
1/2 tsp salt 
1/2 tsp dried oregano
2 TBSP Vegetable Oil

Preheat Oven to 400*F

Mix all seasonings together and add oil to mixture. Set aside.
Cut chicken into fajita style slices.
Cut bell peppers and onion into slices.
Add chicken and veggies together. Drizzle with seasoning mixture and toss together until well blended. Add tomatoes and chiles and mix together. Bake at 400*F in glass pan for 20 minutes. I used a 9x13 pan. Perfect size for the mixture.
Serve on tortillas and top with salsa and cheese.
